This is the second time I've gotten a few gallons of gas just to tip it off and the check engine light comes on a day after.

After calling onstar it's the small emissions leak caused by the gas cap. I've made sure that the gas cap is tight every time I fill up.

My question is: Why does getting a smaller amount of gas than normal trip the emission sensor? This is annoying to say the least.

From my understanding, and personal experience with the gas cap issue, it only runs the check at each quarter mark on the gas gauge. Quarter tank, half tank, etc. My gas cap CEL usually goes on after a quarter or half tank is used.
