In the process of picking up a pair of Falken RT-7m rims from another G8 member and all this wheel and tire specs are messing with my brain. The wheels are 20x8.5 with +35 offset. Fronts should be good I believe, but a quick search has not really given me any significant evidence that the offset in the rear is perfectly ok. Tires on it are 255/30/20 already on wheels.

Seems like everything checks out to me, but like I said no clue about wheels and tires this would be my first purchase, just want to make sure I am not making a mistake...

With only an 8.5 inch wheel and a 255mm wide tire you should be good. The offset will push the wheel out (48-35=12mm) or 1/2". 10mm wider tire, 5mm each side so the tire should sit 3/4 of an inch closer to fender than the stock tires. It should not require any rolling of the fenders but will sit nice and flush.
